Peeled millet has a lighter yellow color and its texture, once cooked, is looser than that of sweet millet. This cereal is rich in proteins and minerals. It does not contain gluten and is easily digestible. The peeled millet should be cooked for about 20 minutes with 2 measures of water for one of millet.
