Empordà fritters are delicious and one of the most popular and typical sweets in Catalonia. A sweet that begins to be eaten during Lent and is at Easter when it has its climax. - Infuse the anise matalahúva and coriander with the milk.
- When the infused milk is warm, dissolve the yeast.
- In a bowl, mix the flour with all the ingredients except the oil and sugar to decorate.
- Knead until you obtain a thin, elastic dough that does not break.
- Make a ball with the dough and cover it with a cotton cloth. Let it rest for about 2 hours or until it doubles in volume.
- Place a pot with enough oil so that the fritters are covered.
- With oiled hands, form balls and make a hole in the center.
- Fry with very hot oil. Turn the fritters when they are golden brown.
- Once fried, place the fritters on absorbent paper and coat them with sugar.
