Yolk nougat is considered a classic sweet of our gastronomy, which cannot be missed as the main guest during the Christmas holidays. It is native to Catalonia, and its creation is inspired by the delicious Catalan cream. Although it is of recent history, in relation to other nougats, it maintains some legends around its creation. It is said that it was created with the purpose of giving use to egg yolks that are not used in the production of other nougats. It has also been thought that the creation of yema nougat has been the product of lucky breaks in preparation. We cannot confirm any of these versions, what we do know is that its flavor, texture and presentation is unmatched and that is why today we want to share with you another simple homemade recipe to make a delicious yolk nougat. Ingredients:- 200 gr icing sugar
- 60 gr water
- 250 gr ground almond
- 3 egg yolks
- Lemon zest
- Ground cinnamon to taste
- White sugar to decorate
- For the syrup: put the sugar and water in a saucepan and boil for about 2 minutes. Reserve.
- In a wide bowl, mix the ground almonds, yolks, lemon zest and cinnamon.
- Add the syrup in a stream and continue stirring the mixture.
- Pour the nougat dough into a silicone or plum cake mold lined with baking paper.
- Cover the nougat well and put weight on top so that it is compact.
- Let the nougat cool in a cool, dry place for at least 24 hours or until it is compact enough.
- When serving, sprinkle white sugar on top and burn it with a blowtorch.
