Panellets are a sweet and soft snack, traditionally consumed on All Saints' Day. Although they were originally made to accompany religious celebrations, today their consumption can last throughout the year. However, for that same reason, the<strong> variety of panellets has also been mutating over time.

It is increasingly common to find panellets with new flavors and textures, revisited recipes and surprising shapes. A new recipe for panellets, which, due to its widespread success, will probably become a classic, is the chocolate panellet.

Chocolate panellets also usually retain the traditional round shape. However, cocoa powder is added to the classic dough made from sugar, egg and almond flour (and depending on the recipe, also potato or sweet potato).

In this way, the panellet acquires a striking dark tone and a surprising flavor. We explain how to make a perfect chocolate panellet.

  1. 1. Mix the almond flour, icing sugar, cocoa powder and egg until you get a compact marzipan dough.
  2. 2. Wrap the marzipan with plastic wrap and leave it in the refrigerator for 12 hours.
  3. 3. The next day, form marzipan balls of about 15 grams and coat them with icing sugar.
  4. 4. Put a hazelnut on top of each panellet and place them on a baking tray covered with aluminum or baking paper.
  5. 5. Bake for about 7 minutes at 220ºC.
