Xylitol, also known as birch sugar, is a 5 C polyalcohol, or sugar alcohol, obtained by the reduction of the sugar xylose through catalytic hydrogenation. Xylose is obtained commercially by hydrolysis of the hemicellulose of birch wood. The caloric value of xylitol is low.
