SENSORY CHARACTERISTICS OF ROSEMARY HONEY WITH ROYAL JELLY:

Visual appearance: Amber, from light to dark, 34 – 85 mm Depth.

Aroma: Floral aroma, intense and persistent.

Taste: Dominant sweet taste, sometimes with acidic or salty notes.

Touch: Variable, from slow to fast, in thin or thick crystals.

POLLENE SPECTRUM: Rosemary ( Rosmarinus officinalis ): minimum 12% Frequently presence of thyme (Thymus sp.); almond tree (Prunnus dulcis); honeysucker (Echium sp); compound (marigold type, Calendula vulgaris); legumes (Fabaceae); radish (Diplotaxis erucoides).

PRODUCTION AREA: Calcareous and warm areas of Catalonia and the East and South of the Iberian Peninsula.

PRODUCTION TIME: Early spring.
