This flour is milled in a traditional stone mill located in Murcia, specializing exclusively in the milling of gluten-free grains. They use whole corn kernels in the process, followed by careful removal of any remaining husks that were not sufficiently ground initially. Corn, known for being a highly energetic food, is the only cereal that contains substantial amounts of carotene (vitamin A). It is also rich in minerals such as magnesium, potassium, phosphorus, iron, and silicic acid, as well as B vitamins. Nutritional values per 100 g:
