Dried peas have a much higher calorie content than fresh peas and are cholesterol-free. Dried peas are notable for their high energy content, with more protein, fiber, and minerals, and a high content of carbohydrates (mostly starch) and vegetable protein. They are also a good source of vitamin B1. Because they are skinless, they avoid the digestive irritations that fresh peas can cause in some people. These peas have a distinctive flavor and are shelled and halved. Shelled and halved green peas are ideal for preparing soups and purées. Shelled green peas retain all their flavor.

Cooking time: There's no need to soak them overnight. Boil them for 15 minutes. The cooking time is calculated using traditional methods (not a pressure cooker) and mineral water.
