Description
The Alta Segarra chickpea is of extraordinary quality . It is a local specialty that, over many generations, has been passed down from father to son.
It has an intense and delicate flavor and a homogeneous texture , not farinous and firm at the same time. This variety of chickpea is ideal for absorbing flavors and aromas.
Small chickpea (7/8 mm), the skin is completely smooth and does not differ from the interior, it increases up to three times its volume during cooking.
Preparation recommendations:
Let it soak overnight. Cook in a pressure cooker for 40 minutes (or for 1 hour in a normal pot) with plenty of water.
Its energetic value derives from the important presence of carbohydrates in the form of starch.
Very rich in Proteins, Calcium, Iron, Magnesium, Phosphorus and Group B Vitamins.
