Fukujinzuke (福神漬) is one of the most popular types of pickle in Japanese cuisine, commonly used as a condiment in Japanese curries. To prepare it, vegetables such as daikon , eggplant, lotus root and cucumber are finely chopped and pickled in a base that is seasoned with soy sauce. Turnip (Daikon) is a very popular pickle for accompaniments and garnishes. It has a crunchy texture and is similar to a cucumber when you prepare it raw.
