Our recipe today will be dedicated to Turkish flatbread , a tribute to Turkish gastronomy. A type of gastronomy highlighted by its habitual use of spices and with a high influence of Mediterranean cuisine, normally using olive oil in most recipes. This Turkish bread has black sesame and flaked salt , a magical Turkish touch that adds a special flavor. Black sesame is very rich in unsaturated fatty acids and provides a high amount of calcium, it also has proteins, iron and zinc. Additionally, Turkish flatbread contains yeast which makes it a little different compared to other flatbread recipes. It is a golden brown bread, so don't forget to brush the bread with egg yolk before putting it in the oven. Now grab a pencil and paper because we begin our recipe:

TURKISH FLAT PLAN

Ingredients (2 loaves)  
  • 600 ml warm water
  • 11 g dry baker's yeast
  • 920 g baking flour
  • 2 level teaspoons of salt
  • 1 egg
  • 1 level teaspoon of sugar
  • 1 tablespoon oil
  • black sesame
  • salt flakes
Preparation (1 hour approx.): 1. Dilute the yeast in warm water. 2. In a large container, mix the flour, salt and water with yeast. Knead until you obtain a smooth, homogeneous, slightly sticky ball. 3. Leave the dough in the container, cover it with a cloth or plastic wrap and let it ferment for 30 minutes. 4. Turn on the oven at 250ºC. 5. Flour the work surface and divide the dough into 2 parts. Form two balls and stretch them with your hands until they form a circle of about 25 cm in diameter. 6. Place each loaf on a baking tray covered with baking paper and let it rest for 10 minutes. 7. Beat an egg together with the sugar and oil. 8. With your fingers, make grooves in the two loaves and paint them with the beaten egg. Sprinkle black sesame and flaked salt. 9. Lower the oven to 210ºC and bake each loaf for about 10 minutes or until golden. Enjoy!
