RECIPE SPELLED AND WHEAT BREAD WITH GARLIC AND PARSLEY

Ingredients (1 loaf of bread, 21 cm long)  
  • 340 ml of warm water
  • 7 g dry baker's yeast
  • 1 egg + 1 white
  • 1 teaspoon apple cider vinegar
  • 335 g strong flour (wheat)
  • 300 g semi-whole spelled flour
  • 1 level teaspoon of baking soda
  • 10 g salt
  • 4 g ground panela
  • 4 cloves of garlic
  • 1 tablespoon chopped parsley
  • olive oil
Preparation (90 minutes approx.): 1. Mix the dry yeast with the warm water and set aside. 2. Beat the egg, white and vinegar. 3. In a large container add the 2 flours, the baking soda, the salt, the panela and the egg and vinegar mixture. Mix lightly. 4. Pour the water with the yeast and knead until you obtain an elastic dough. 5. Grease a sufficiently deep container with oil and place the dough in the center. Cover with plastic wrap or a cloth and let rise for about 20 minutes in a warm place. 6. Crush the garlic cloves with a pinch of salt, add the parsley and oil until forming a light paste. Reserve. 7. Grease the mold with oil. 8. Divide the dough into 12 portions and shape them into a ball. Place them in the mold and with the help of a brush, spread them with the garlic and parsley mixture. Reserve. 9. Heat the oven to 220ºC. 10. Bake the bread for about 45 minutes. When the bread begins to brown, we recommend covering the bread with silver paper to prevent the garlic and parsley from burning and becoming bitter. 11. Remove the bread from the oven and let it cool before unmolding. Enjoy!
