RECIPE: OAT, WHEAT AND BLACK SESAME CRACKERS

Ingredients (approx. 30 cookies):
  • 40 g deodorized coconut oil (odorless and tasteless)
  • 90 g of milk (may or may not be of animal origin)
  • 90 g fine oat flakes
  • 15 g oat bran
  • 90 g light strength wheat flour
  • 10 g black sesame
  • 5 g baking powder
  • 3 g salt
  • 5g sugar
Elaboration: 1. Heat the coconut oil together with the milk until the oil melts. 2. In a large container, mix the oat flakes, bran, and oil and milk mixture. We mix well and let it rest for 15 minutes. 3. Heat the oven to 200ºC. 4. To the previous mixture we add the wheat flour, sesame, yeast, salt and sugar. We knead until there is a uniform dough. 5. Sprinkle the surface where we are going to work with flour and stretch the dough with the help of a rolling pin in different directions. There should be a very thin dough, about 2 or 3 mm. It is normal that the dough is not very elastic and is a little brittle, don't worry, that's how it should be. 6. When we have the dough stretched, we cut rectangular pieces (or the shape you want) and with the help of a spatula we place them on a baking tray. 7. We bake the cookies at 200ºC for about 15-20 minutes or until we see that they are toasted. Take advantage!
