Coca de Cacaus

Coca de cacaus is a typical recipe from the Valencian region, specifically Horta Sur, an area where peanuts, one of the main ingredients of the recipe, have traditionally been grown. Valencia is internationally recognized for its gastronomy, highlighting coca de cacaus among one of the most famous recipes. It is a flat salty paste similar to a cookie, which is used to accompany traditional lunches in the region. Although there are numerous types of coca throughout the beautiful lands of Valencia, this one in particular has become the icon of its culture.

The ingredients to prepare coca de cacaus are basic and easy to find, so you won't have any problems when looking for them. Generally, this recipe is used during peanut harvest times, which is not considered a limitation for its preparation, since the ingredients can be found at any time of the year. Its preparation is very easy and quick to do, it won't take you more than an hour. Go for it! Ingredients (1 coca)
  • 2 glasses of wheat flour (bakingable)
  • 1/2 glass of extra virgin olive oil
  • 1/2 glass of white wine
  • 1 teaspoon salt
  • 1 handful of raw peanuts with skin
  • 1 pinch of Maldon salt
Preparation (60 minutes approx.): 1. In a container, mix the flour, oil, wine and salt. Knead everything until the dough is smooth and homogeneous, without lumps. 2. Form a ball and let it rest in the container, covered with a cotton cloth, for about 15 minutes. This way the gluten will relax and we will be able to stretch the dough without shrinking. 3. Heat the oven to 200ºC. 4. Stretch the dough to a thickness of about 5 mm. Place it on a baking tray covered with baking paper. 5. Put a handful of raw peanuts with skin on in a bag and roll them over to break them up. 6. Spread the chopped peanuts over the coca. Chop the peanuts on top with the help of a spoon so that they adhere to the dough. 7. Finally, put some Maldon salt flakes on top of the coca. 8. Bake at 180ºC degrees until the coke is golden (about 15 minutes). Remove from the oven and let cool Enjoy!
