The Santiago cake is a traditional recipe from Galician cuisine , which dates back to medieval times, with the name "royal cake" and its exquisite ingredients and their high cost made it a dessert reserved for a select group of people. As time went by, specifically in the second decade of the 20th century, characteristic symbols such as the Cross of Santiago were incorporated into the surface of the cake, incorporating the silhouette of this Cross in anti-humidity icing sugar, being a true success in Galicia and in the rest of the provinces.
This cake is characterized by not containing flour in its ingredients , which makes it different from other traditional recipes such as the Elche cake, for example. The Santiago cake can currently be found in any pastry shop in the area where the Camino de Santiago passes from Roncesvalles to Santiago de Compostela and throughout the entire geography of the Autonomous community of Galicia.

RECIPE TO MAKE A SANTIAGO CAKE
We have a kit available with the necessary ingredients to make a Santiago cake.Ingredients (22cm mold):
- 250 g sugar
- 250 g ground almonds
- 5 medium eggs
- Lemon zest
- A pinch of ground cinnamon
Besides:
- Anti-humidity icing sugar
- Cross of Santiago template (can be printed online)
Preparation (90 minutes approx.):
1. Heat the oven to 180ºC.
2. In a large bowl, mix the ground almonds with the sugar.
3. Add the eggs one at a time and beat until you get a homogeneous mass.
4. Add the zest of a lemon and ground cinnamon and mix well.
5. Line a round mold of about 22 cm in diameter with butter and flour.
6. Pour the dough into the mold and bake for about 30 minutes or until the toothpick comes out clean when you poke the dough. If after 30 minutes the toothpick comes out still wet and the surface of the cake is already golden brown, cover it with paper. aluminum and finish baking.
7. Remove the cake from the oven and let it cool completely (1 hour or so).
8. Place the cross of Santiago in the center of the cake and sprinkle moisture-proof icing sugar on top.
9. With great care, remove the cross of Santiago and serve.
