PLUM CAKE HAZELNUTS AND CHOCOLATE

Ingredients
  • a handful of raw hazelnuts
  • 4 eggs
  • 175g sugar
  • vanilla (optional)
  • 130 g hazelnut puree
  • 100 g oil
  • 6 tablespoons milk or vegetable drink
  • 240 g semi-whole wheat flour
  • 1 sachet of chemical yeast
  • 50% cocoa chocolate chips (for the dough and to decorate)
Preparation (75 minutes approx.): 1. Heat the oven to 180ºC. 2. Soak the hazelnuts. 3. Beat the eggs together with the sugar until you obtain a pale yellow creamy mass. 4. Add the vanilla (optional), the hazelnut puree and continue beating. 5. When the puree is well integrated, and without stopping beating, little by little add the oil and the vegetable drink. 6. Sift the yeast together with the wheat flour, without discarding the bran. Add to the liquid dough in two batches, mixing gently with a silicone spatula. 7. Take a handful of chocolate chips and sprinkle a little flour on top. This will prevent them from sinking during baking. 8. Pour the chocolate chips into the dough and mix. 9. Grease a plum cake mold and pour the dough. 10. Drain the hazelnuts and cut them in half. Spread the hazelnuts on top of the plum cake along with a few chocolate chips. 11. Bake for one hour. Halfway through cooking, you can cover the plum cake with aluminum foil if it is still raw on the inside and golden on the outside. 12. Remove the plum cake from the oven and let it cool. Enjoy!
