ALMOND AND CHOCOLATE CAKE

Ingredients (1 plum cake mold)
  • 3 eggs
  • 100 g melted butter
  • 110 g ground panela
  • 5 g Royal type chemical yeast
  • 60 g ground almonds
  • 100 g almond puree
  • 1 pinch of salt
  • 1 pinch of ground cinnamon
  • 100 g 70% cocoa chocolate medallions
Preparation (90 minutes approx.): 1. Grease the plum cake mold with oil or butter. Reserve. 2. Set the oven to 200ºC. 3. Separate the yolks from the whites. Whip the egg whites until stiff and set aside. 4. In a large bowl, beat the butter, panela and yolks until the mixture is foamy. 5. In another container, mix the yeast with the ground almonds, salt and cinnamon. You have to avoid leaving lumps. Add to the previous mixture and stir gently with the help of a silicone spatula. 6. Pour the almond puree into the dough and stir well until everything is well integrated. 7. Crush or chop the chocolate by hand. Add it to the dough with the help of the silicone spatula. 8. Finally, beat the egg whites again so that they do not form lumps and add them in batches to the cake batter. The movements with the spatula must be smooth and slow. 9. Fill the mold with the cake batter and bake at 190ºC for one hour or until a toothpick inserted into the center of the cake comes out clean. 10. Let the cake cool and decorate it with icing sugar, cocoa powder or leave it as is. Enjoy!
