Tahini Cookies

Tahini cookies are a very traditional recipe of Israeli origin. The spread of this recipe to Europe began in Morocco, with Spain being one of the countries that has best adapted the recipe, giving that special touch to each of its preparations and presentations. These cookies, in addition to tahini, are made from oats, brown rice flour, honey and sesame seeds to decorate.

TAHINI COOKIES RECIPE

Ingredients (14 units):
  • 40 g oat flour
  • 80 g brown rice flour
  • 140 g tahini (can be raw or roasted)
  • 95 g soft honey (lemon, orange blossom, acacia...)
To fill the cookies:
  • 70% cocoa chocolate medallions (can also be white chocolate, milk chocolate, etc.)
To decorate:
  • raw white sesame
  • black sesame
Preparation (1 hour approx.): 1. Heat the oven to 150ºC. 2. In a bowl, mix the flours, tahini and honey until forming a homogeneous dough. 3. Cover the dough with plastic wrap and place in the freezer for about 15 minutes. 4. Divide the dough into 14 balls. 5. Slightly flatten each of the dough balls and place 2 chocolate medallions in the center. Form a ball so that the chocolate remains inside the cookie. Repeat this process with all the balls. 6. Roll the cookies through white and black sesame seeds and crush them lightly with your hands. 7. Bake the tahini cookies for about 12-15 minutes. 8. Let the cookies cool completely. Enjoy!
