It is a typical cookie recipe for the celebration of Christmas, its origin is British, but it has been so popular that the recipe has spread throughout the world adopting new forms, it has even been provided with typical ingredients from the regions that adopt it. , maintaining its quality and an original touch of each region. Here we give a natural touch to these delicious cookies by replacing refined sugar with panela , which in addition to providing a special flavor, also provides a very characteristic color and aroma. These cookies have a classic figure of a Christmas doll, which has allowed them to become popular in movies and comics. Surely you have already seen them! Now it's time to do them! And from Casa Perris we want to help you with our recipe for ginger, cinnamon and brown sugar cookies. Ingredients (approx. 45 cookies)  
  • 250 g loose flour
  • 150 g butter
  • 100 g ground panela
  • 5 g chemical yeast
  • 1 teaspoon cinnamon powder
  • 1 teaspoon ginger powder
  • 1 egg
Preparation (1 hour and a half approx.): 1 . Heat the butter slightly or leave it out of the refrigerator for a few hours until you obtain a creamy texture, without becoming liquid. 2 . Mix all the ingredients and knead until you obtain a homogeneous dough. 3 . Wrap the dough with plastic wrap and let it rest for about 15 minutes in the freezer so that it takes shape. 4 . Flour the surface where we are going to work and stretch the dough until it is about 5 mm thick. 5 . Choose the cookie cutters that you like the most and cut the cookies. 6 . Place the cookies on one baking tray or more than one. 7 . With the leftover dough, we repeat the process: flour the work surface, stretch the dough and cut the cookies. And so on until the dough is finished.   8 . Bake for about 15 minutes or until the cookies are golden brown. (We must keep in mind that if different size cookie cutters are used, we must bake the cookies by size since cooking times will also vary.) ENJOY!
