The preparation of the coconut flan is very simple, it will not take you more than an hour to be ready. Its ingredients are very few and you can divide them into two parts. The first is for making the caramel, and the other for the flan. Despite this, they are still very few, which translates into a single word, economical. It is necessary to make both preparations separately so that in the final step it is a single bowl. The secret of this delicious flan is in the caramel process, so you should not stop using lemon juice since it is responsible for giving that grandma's touch. For the caramel:
  • 6 tablespoons sugar
  • 2 tablespoons of water
  • A few drops of lemon juice
For the flan:
  • 400 ml coconut milk
  • 120 g sugar
  • 6 eggs
  • grated coconut (optional)
Preparation (15 minutes + 1 hour cooking approx.): 1. Preheat the oven to 180ºC. Place a baking tray with about 2 fingers of water.

  For the caramel: 2. In a saucepan, mix the sugar, water and drops of lemon juice. Turn on the heat and without stirring, wait for the mixture to begin to bubble and turn golden in color. When it starts to darken, remove from the heat and stir until it becomes caramel-colored. Let it rest for a minute.

3. Pour the caramel into a mold and spread it well throughout the base of the mold.

  For the flan: 4. Mix the coconut milk with the sugar and stir until the sugar has dissolved.

5. In a bowl, beat the eggs well and add the coconut milk little by little. Stir well and pour the mixture into the mold.

6. Cover the mold with silver paper and place it on the oven tray carefully because the water in the tray will be very hot.
