Coca with cherries is a typical dessert from Reus (Tarragona) with a great tradition in its gastronomy, mainly in the months of May and June due to the celebration of Corpus Christi.

During the central day of Corpus Christi, it is customary to give Coca with Cherries to acquaintances. So prepare this delicious dessert with the best recipe that we bring today. In which Reus stands out! Ingredients (1 large coca)
  • 500 g eco strength flour
  • 80 g sugar
  • 1 pinch of salt
  • 1 pinch of ground cinnamon
  • zest of 1 lemon
  • 3 eggs
  • 80 g butter at room temperature
  • 8 g dry baker's yeast
  • 150 ml warm milk
  • fresh cherries
  • 1 egg yolk to paint the coca + 1 tablespoon of water
  • sugar to decorate
Preparation (2 and a half hours approx.): 1. Mix the warm milk with the yeast. 2. In a bowl, mix the flour, sugar, salt, cinnamon, and lemon zest. 3. Next, add the eggs, the diced butter and the milk with the yeast. 4. Knead everything until you obtain a smooth dough. Make a ball with the dough. 5. Spread the dough with oil and let it rest, covered with a clean cloth, for half an hour. Stretch the dough into an elongated or square shape. Place some fresh cherries on top and cover the coca again with the cloth. Let it rest for an hour. 6. Turn on the oven at 180ºC. 7. Beat an egg yolk with a tablespoon of water and paint the coke carefully. 8. Sprinkle sugar on top and bake the coca for about 20 minutes. 9. Let cool and eat. Be careful with the cherry pits! Enjoy!
