As for the preparation time, it is estimated to be approximately 90 minutes. And the result is a cake that 20 people can eat, distributing regular-sized pieces. The big problem with preparing this type of cake is that people almost always want a little more. So learn the recipe and be prepared to make it very often! Ingredients (1 cake about 20 cm diameter):  
  • 200 g pumpkin, peeled and seeded
  • 60 g peeled walnuts
  • 3 eggs
  • 150 g brown sugar
  • 130 g mild oil
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1 pinch of salt
  • 3 level teaspoons baking powder
  • 200 g whole wheat spelled flour
  • 50% cocoa chocolate chips
    Preparation (90 minutes approx.): 1. Heat the oven to 180ºC. 2. Grind the pumpkin until it is very fine. Reserve. 3. Chop the walnuts and reserve them. 4. In a large container, beat the eggs together with the sugar until they become foamy and increase in volume. 5. While continuing to beat the eggs, little by little add the oil and finally the spices and salt. 6. Sift the baking powder and flour. Add the bran that remains in the sieve to the dough. 7. Add the chopped walnuts and stir with a silicone spatula. 8. Finally, add the grated pumpkin and stir carefully. 9. Grease a mold with butter and sprinkle it with flour. 10. Pour the dough into the mold and spread the chocolate chips on top. 11. Bake for about 45 minutes. The cooking time is not always exact, so we recommend that you prick the cake with a toothpick or skewer and check that it comes out clean. If it comes out stained with dough, bake a few more minutes. 12. Remove the cake from the oven and let it cool completely. Enjoy!
