The alfajor is a very popular sweet throughout Latin America although its origin is Arabic, specifically adopted by Al-Andalusian cuisine. His name ?Alfajor? It comes from the Arabic word ?Al-hasu'' and its translation into Spanish translates as ''stuffing''. After the emancipation process, the recipe became one of the emblematic sweets that is still maintained throughout the Hispanic region to this day. In Argentina its distinction is absolute, to the point of carrying its own name such as the Alfajores Marplatenses, exalting Mar de Plata. It is a recipe that has variations according to many factors. One of them, for example, is that it uses local and, above all, seasonal products for raw materials. For example, Mar del Plata alfajores are different from the rest thanks to the chocolate coating, which gives them, in addition to a rich flavor, a pleasant appearance in their presentation. Its preparation is basically similar to the original alfajores recipe that we published a few weeks ago , its two or more cookies are joined together with jam, jelly, dulce de leche, chocolate and other fascinating mixtures to the palate.   • 125g corn flour
  • 150g Dark chocolate to melt in a bain-marie
  • 300gr Dulce de Leche
  • 50g brown sugar
  • 50g pomade butter
  • 50g defatted cocoa
  • 20g Honey
  • 25gr Corn starch
  • 2 Eggs
  • 5gr Yeast
  • 5g Baking soda
  • 1 tablespoon vanilla
PREPARATION 1º In a bowl, pomade butter and sugar 2nd Mix 3º Add the eggs 4º Mix 5º Add the vanilla and honey to the mixture 6º In another container, sift all the powdered ingredients 7º Add to the previous mixture 8º Do not knead, just mix until the ingredients are completely integrated 9º Let the dough rest for 2 hours in the refrigerator 10º Next, wrap the dough in plastic wrap. 11. With the help of a roller, start stretching and finish when you achieve a thickness of approximately 1.5cm 12º With a glass or cup create circles.
