This recipe is simple and very healthy for our body, it is made up of a series of fresh vegetables and Thai rice with an unmatched flavor. This dish has been adopted in much of Europe and is eaten at any time of the year. It is easy to prepare, you will only invest 45 minutes of your time, in relation to its ingredients, they are found in all supermarkets and their prices are quite affordable. This vegetable and rice curry can be consumed by anyone, including those who are on a vegan diet, offering surprising results.

Do you like a spicy touch? Add a pinch of cayenne. Or you may prefer to add some finely chopped cilantro on top to give it that special touch. Here we leave you the complete recipe so that you can make it at home and enjoy it with your whole family. Ingredients (4 servings)  
  • 1 onion
  • 2 cloves of garlic
  • 1 large carrot
  • 1 medium white zucchini
  • 1 handful of boiled peas
  • 3 teaspoons yellow curry powder from Casa Perris
  • 500 ml coconut milk
  • olive oil
  • salt
  • 200 g scented rice (Thai rice)
  • Optional: cayenne to give a spicy touch to the curry
Preparation (45 minutes approx.): 1. Chop the onion and garlic and fry in a pan with a little olive oil. 2. Meanwhile, wash, peel and cut the carrot and zucchini into not very small pieces. Add to pan. Salt to taste and fry for 5 minutes with the lid on. 3. Add a splash of water so that the vegetables cook well and remain soft. Cook for about 10 more minutes with a lid. 4. In a saucepan, boil the peas for about 10 minutes, drain and add to the pan. Mix well and cook for 5 more minutes without covering. 5. Add three teaspoons of curry powder to the vegetables, stir well and let cook for 1 minute. For a spicy touch, add cayenne powder. 6. Finally, pour the coconut milk into the pan and let it cook for about 10 minutes over high heat. Add salt if necessary. 7. Wash the scented rice and boil it for about 10 minutes. 8. Serve the vegetable curry immediately accompanied by fragrant rice. Enjoy!
