The chanterelle (Cantharellus cibarius), also known as the golden chanterelle, is a wild mushroom highly prized for its fruity aroma and smooth, firm texture. In its dehydrated form, it retains all its natural aroma and can be enjoyed out of season. After a brief rehydration, it regains its consistency, and the soaking water can also be used to enrich broths and sauces.
To rehydrate, soak in cold water for approximately 45 minutes
