The fairy ring mushroom, known in Catalonia as moixernó or camasec, is a wild mushroom highly prized for its intense and delicately almond-like aroma. Small in size with a light beige cap, it grows in fairy rings in meadows and pastures after spring and autumn rains.
Its fine and fragrant flesh provides a deep and elegant flavor, ideal for enriching rice dishes, stews, omelets, and sauces. Traditionally used in Mediterranean cuisine, the moixernó stands out for its ability to enhance the flavor of dishes with very small quantities.
In its dehydrated form, it retains all its aroma and properties. It only needs brief rehydration to regain its texture and release its characteristic perfume in broths and hot preparations.
To rehydrate, soak in cold water for approximately 45 minutes
