SENSORY CHARACTERISTICS OF ROSEMARY HONEY:

Visual appearance: Extra light amber.

Aroma: Not very intense, medium persistence, floral with camphorous tones.

Mouthfeel: Sweet taste, generally without more, sometimes with slight acidic notes. Nasal aromas increase, with fruity notes appearing if it contains almond, farinaceous notes if it is rich in legumes, and a “greasy” palate sensation if it is rich in honeysuckle.

Touch: Fine crystallization if it is rich in almond, and thick if it is rich in radish.

MINIMUM POLLEN PERCENTAGE: Rosmarinus officinalis > 12%
Production area : Calcareous areas in the center and east of the peninsula.
