SENSORY CHARACTERISTICS OF LAVENDER HONEY:

Visual appearance: White to amber, sometimes a little dark if it contains some honeydew.

Aroma: Floral with a clear lavender component, extraordinarily intense and very persistent; with phenolic notes.

Mouthfeel: Sweet with acidic notes. If it is dark, presence of honeydew, it may have slight salty notes. The aromas increase noticeably in the retronasal.

Touch: Average crystallization, trend and size of the crystals.

MINIMUM POLLEN PERCENTAGE: Lavandula latifolia , L vera and its hybrids 10%
PRODUCTION AREA: Chestnut forests of the northwest mountain ranges of the peninsula and Andalusia.
