SENSORY CHARACTERISTICS OF CHESTNUT HONEY:
Visual appearance: Dark amber-amber. With brownish-greenish tones, especially in the contact area of the honey with the wall of the container.
Aroma: Floral, with a clear and marked woody component, dry wood.
Mouthfeel: Sweet with salty notes and, often, if it has heather above all, bitter notes; acidic notes if it has brambles.
Touch: Tendency towards low crystallization, except with accompaniment of fabaceae.
MINIMUM POLLEN PERCENTAGE: Castanea sativa 75%
