CHARACTERISTICS OF HEATHER HONEY: Visual appearance: Light amber, sometimes with reddish tones. Aroma: Intense and very persistent of leaf litter in autumn, humus, mushrooms. Mouth sensation: Sweet, with a clear bitter component and with clear salty notes, which are greater if there is an accompaniment of honeydew; In this case, malted notes appear in the retronasal. Touch: Tendency to variable crystallization: high if accompanied by meadow fabaceae; lower if accompanied by honeydew.
