Description
SENSORY CHARACTERISTICS OF ORANGE HONEY:
Visual appearance: Light amber.
Aroma: Floral, with a clear and intense methyl anthranilate component. Its intensity and persistence vary depending on the area and its flora.
Mouth sensation: Sweet taste, with a clear, very marked acid component. Increase in retronasal olfactory sensations.
Touch: Slow crystallization and fine crystal, except that it is rich in radish (Diplotaxis erucoides).
MINIMUM POLLEN PERCENTAGE: Citrus aurantius > 12%
The orange tree varieties mostly grown in Spain are from the Navel group, selected for their pollen sterility and anther indehiscence to avoid the presence of seeds. Therefore, honeys with Citrus aurantius pollen values > 5% can be accepted as monofloral if the methyl anthranilate contents exceed 1.5 ppm (mg/kg).
