SENSORY CHARACTERISTICS OF HIGH MOUNTAIN HONEY:
Visual appearance: Amber to very dark amber, sometimes with reddish tones.

Aroma: Floral, sometimes with fruity and humus notes; intense and moderately persistent.

Mouthfeel: Sweet, often with salty and sour notes; sometimes slight bitter notes if it contains heather.

Touch: Slow crystallization

MINIMUM PERCENTAGE OF POLLEN: Pollen from montane plants with testimonial crops.
Production area: Mountainous area (600 to 1,800 m) of the mountain ranges of the Iberian Peninsula.
