Whole wheat flour provides a high percentage of fiber , as well as protein, carbohydrates, vitamins, and minerals. Stone-ground whole wheat flour retains all the nutritional properties of the wheat grain. When making bread, we recommend letting the dough rest after adding the water; this allows the gluten to hydrate properly.
