It is made from durum wheat semolina and is very popular in North African cuisine. To cook the couscous we must pour the same amount of boiling salted water into a container with the same amount of couscous and let it rest, covered, for about 3 minutes. Then, we add a splash of oil, stir with a fork and let it rest for another 5 minutes.
