This is a white chocolate coating with caramel. It has a strong character, an intense, delicate, slightly acidic flavor, with aromas of fruit and spices.

Caramel/amber in color, it has a creamy flavor, crystallization capacity, and fluidity. Ingredients include sugar (34%), milk powder (30%), and cocoa butter (35%).

In pastry making, Vanini Aurum pairs well with all filling creams, small tarts, cakes, and glazes. In chocolate making, it is suitable for praline coatings and glazes, as well as for traditional bars, filled and sprinkled with nuts.
