The verdina bean, green bean or faba verdina is a variety of colored beans and considered a gourmet bean and one of the most appreciated by gastronomy experts. The color of its skin is due to the fact that the plant is pulled from the ground when the green beans are not fully ripe. The plants are then hung in a dark, ventilated place to dry slowly. The original color of the green bean is white, but it turns green due to the abundant sap that the plant still contains. This bean is flat, medium-sized, light green in color and has a very thin skin. Cooked, they acquire an exquisite flavor and their skin is so thin that it is almost invisible. Maintains integrity in the grain that never falls apart. Very fine on the palate, it is ideal to pair with fish and seafood. It is characterized by a small size compared to other types of beans. Cooking time: We will soak the beans overnight. The next day we change the water and boil it for 30 minutes. The cooking time is calculated with traditional cooking (not pressure cooker) and with mineral water.
