This buttery bean, with a thin, black skin, is native to Tolosa (Guipúzcoa). It stands out for its great flavor and for leaving a consistent broth. Cooking time: Soak the beans for about 8 hours. Boil for about 2 hours over low heat. Frighten the beans with cold water at the first boil.
