They are a large, white, kidney-shaped, and flat variety of bean, grown in the town of La Granja de San Ildefonso (Segovia). This bean variety has a delicate and tender flavor and is ideal for stews and soups.

Cooking time : Soak the beans overnight. Simmer gently for approximately 2 hours. Shock the beans with cold water at the first boil. The cooking time is calculated using traditional methods (not a pressure cooker) and mineral water.
