Valencian garrofón beans are an essential ingredient for the proper preparation of Valencian paella. Cultivated traditionally in the Valencian countryside for generations, they are selected and packaged by hand. Their very thin skin and creamy texture distinguish them from other garrofón beans that become mealy and dry once cooked.

Cooking time : Soak the beans overnight. The next day, change the water and boil them for 45 minutes. The cooking time is calculated using traditional methods (not a pressure cooker) and mineral water.
