It is a very delicate white bean, medium-sized and hook-shaped. Once boiled, it has a mild and consistent flavor, leaving a pleasantly mealy sensation on the palate.

Cooking time : Soak overnight. Boil for 45 minutes. Shock the beans with cold water at the first boil. Cooking time is calculated using traditional methods (not a pressure cooker) and mineral water.
