These Santa Pau beans originate from the volcanic region of La Garrotxa (Catalonia) and are small, kidney-shaped with a very thin skin. Once cooked, they develop an intense flavor and a slightly mealy texture. They are ideal for accompanying any stew or simply seasoned with a good olive oil.
Cooking time : Soak overnight. Boil for 40 minutes over low heat. Shock the beans with cold water at the first boil. Cooking time is calculated using traditional methods (not a pressure cooker) and mineral water.
