Curried lentil soup

CURRY LENTIL SOUP RECIPE

Ingredients (2 servings)  
  • 1 spring onion
  • 1 green Italian pepper
  • 1/2 teaspoon yellow curry
  • 60 g peeled red lentils
  • 40 g frozen peas
  • water
  • salt
  • oil
  • pumpkin seeds (optional)
Preparation (45 minutes approx.): 1. Wash and chop the vegetables. 2. In a non-stick saucepan, add a splash of oil and sauté the vegetables over low heat until they are tender. 3. Add half a teaspoon of curry, a little salt and the previously washed lentils. 4. Cover with water and add the frozen peas. 5. Boil over moderate heat for about 20 minutes. Add more water if necessary. 6. Serve the soup very hot with a handful of raw pumpkin seeds. Enjoy!
