- Heat the coconut milk in a saucepan over very low heat until there are no lumps.
- Reserve 300 ml of coconut milk and cool.
- Leave 100 ml of coconut milk in the saucepan and add 2 ounces of chocolate. Stir the mixture over very low heat until the chocolate melts. Cool.
- When the 300 ml of coconut milk are cold, add sugar or sweetener and 5 tablespoons of chia seeds. Stir very well and leave overnight in the refrigerator.
- Add 1 tablespoon of chia seeds to the coconut milk and chocolate mixture. Sweeten to taste if desired. Stir and leave overnight in the refrigerator.
- When it is time to serve the pudding, stir the 2 mixtures well (you can lighten the texture by adding more coconut milk) and serve in glass glasses so that the 2 types of pudding can be clearly seen.
