Beans have great nutritional value, consuming beans means consuming vitamin B, minerals, proteins and fiber. They are normally prepared in soup, but there are other great varieties of preparation such as fried and in the form of medallions. Bean medallions are ideal in vegan diets since they fulfill the function of ground meat in hamburgers and their nutritional contribution is very similar. In this recipe, cinnamon beans will be used, so it will be a perfect color to simulate beef. Another special ingredient in this dish is Shiitake mushrooms, which provides more protein to the dish. And as a garnish we have chosen brown rice to add more fiber to this dish, as well as proteins and fatty acids. BEAN AND RICE MEDALLIONS

Ingredients (6-8 medallions)
  • 150 g cinnamon bean
  • 50 g brown rice
  • 1/2 onion
  • 1 clove garlic
  • dried parsley
  • Shiitake mushrooms to taste
  • salt
  • oil
If the dough is soft:
  • 1 or 2 tablespoons fine oat flakes/potato flakes/millet flakes or quinoa flakes
Preparation (8 hours of soaking + 2 hours approx.): 1. Wash the beans and discard any that are stained or with open skin. 2. Cover them with plenty of water and let them soak for a minimum of 8 hours. 3. The next day, put the beans in a pot and cover them with mineral water. Boil for 1 hour and a quarter over low heat or until the beans are tender. Drain them and reserve. 4. Soak the Shiitake mushrooms while we prepare the rest of the ingredients. 5. Meanwhile, wash the rice and boil it for about 25 minutes. 6. Put a frying pan on the heat with a splash of oil. 7. Chop the onion and garlic and fry until the onion is transparent. Salt to taste. 8. Drain the mushrooms, chop them and add them to the pan. 9. Add the boiled rice and stir well. Transfer the sauce to the chopper and blend for a few seconds. The result does not have to be a homogeneous paste. Reserve. 10. Chop the beans with the chopper in 2 batches. 11. In a large container, mix the beans with the sofrito and rice mixture and a little chopped parsley. 12. If the mixture is soft, add some oatmeal, potato, millet, etc.? The dough has to be malleable but not soft. 13. With slightly moistened hands, we form the medallions. 14. Heat a frying pan and score the medallions on each side until golden. 15.
