Chickpea hummus is a puree-like consistency cream made from cooked chickpeas with a touch of lemon juice. It is one of the most popular recipes from the Middle East that has spread throughout much of the world, delighting the palates of young and old. It is considered the perfect appetizer to accompany with croutons, sautéed vegetables or bread. Its simple ingredients make it similar to preparation in the Middle East, South America, Europe or anywhere in the world since they are easy to obtain, without altering its original flavor.

RECOMMENDED RECIPE: RED LENTIL HUMMUS

The recipe presented below is prepared in 90 minutes. It makes approximately 30 to 35 servings, which is enough to whet your appetite for the strong food that usually accompanies it. Their preparation tricks are key to not causing havoc, so pay attention to the advice we tell you below. Ingredients
  • 200 g Pedrosillano chickpeas
  • 1 clove garlic
  • 2-3 tablespoons raw tahini (can be toasted)
  • juice of half a lemon
  • mineral water
  • ground cumin
  • oil
  • peppers
  • salt
Preparation (soaking for 12 hours + approx. 90 minutes of preparation): 1. Wash the chickpeas and soak them overnight. 2. The next day fill a pot with water and bring to a boil. 3. Drain the chickpeas and add them to the pot when the water boils. Cook over medium heat for one hour and ten minutes. Add salt halfway through cooking. 4. Drain the chickpeas when they are tender and rinse them with cold water. Strain and reserve. 5. A trick so that the garlic does not repeat itself is to open it lengthwise and remove the inner sprout. 6. Place the chickpeas, garlic, tahini, the juice of half a lemon, cumin, a splash of oil and a splash of water in a blender glass and blend. Add water little by little according to the desired texture. The texture has to be creamy, neither thick nor liquid. 7. Taste the hummus and adjust the salt if necessary. According to our taste, add more tahini, cumin or garlic. 8. Place the tahini in a bowl or deep plate with a good splash of olive oil and paprika on top. Serve the hummus accompanied with bread or vegetables cut into strips. Enjoy!
