VEGETARIAN WHEAT FAJITAS

Ingredients (3 medium fajitas)
  • 125 g organic Zamora flour
  • 1 g chemical yeast (Royal type)
  • 3 g salt
  • 25 ml oil
  • 63 ml warm water
For the filling:
  • soy and bean protein steaks
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • mushrooms
Preparation (1 hour approx.): 1. Sift the flour together with the baking powder. Add the salt, oil and mix with your hands. 2. Add the water little by little and knead until the dough is smooth. 3. Divide the dough into 3 equal parts and form 3 balls. Cover them with plastic wrap and let them rest for 30 minutes. 4. Cover the soy protein steaks with water and a splash of tamari. Let soak for about 30 minutes. After half an hour, leave the steaks in a colander to drain. 5. Meanwhile, cut the onion and peppers into strips and sauté. When the onion starts to become transparent, add the mushrooms and the steaks cut into strips and let them fry for about 5 more minutes. 6. To make wheat tortillas, take a ball of dough and with the help of a rolling pin shape it into a circular shape. If you don't have a rolling pin, you can use a pot or pan and press down on the dough ball. 7. Put a frying pan over high heat. Carefully place a wheat tortilla and turn it over when bubbles form.
