LENTIL SALAD WITH TOFU AND SPROUTS

Ingredients (4 servings)  
  • 200 g lentil caviar
  • young sprouts of red chard
  • Cherry tomatoes
  • tofu
  • soy sauce
  • ground pepper
  • salt
  • oil
Preparation (1 hour approx.): 1. Wash the lentils well. Put them in a pot and cover them with cold water. Bring to a boil and cook for about 30 minutes over low heat. Add salt to taste halfway through cooking.

2. Cut the tofu into squares and sauté it with a little olive oil and soy sauce. Season the tofu with ground pepper and set aside.

3. When the lentils are tender, drain them and let them cool. 4. Cut the tomatoes and chard sprouts, season with salt and olive oil. 5. Mix the cold lentils, tofu, tomatoes and chard sprouts. Good luck!
