The recipe that we will share below is calculated for approximately 4 people. If the number of diners varies, just double the quantities or reduce them according to the case. And finally, remember that the lemon juice dressing is the special touch to this salad. Ingredients (4 servings approx.)

 
  • 1 spring onion
  • 100 g beans
  • 100 g red quinoa
  • Cherry tomatoes
  • half a cucumber
  • 1 avocado
  • vinegar
  • water
  • salt
  • oil
  • Half lemon
Preparation (12 hours of soaking + 90 minutes approx.): 1. The night before, wash the beans and soak them. 2. Peel and cut the young onion into squares. Put it in a bowl, add salt and cover it with water and about 3 tablespoons of apple cider vinegar. This process will help soften the sting of the spring onion.

3. Put mineral or filtered water in a saucepan and pour in the drained beans. Bring to a boil and let it cook for approximately an hour and a quarter over low heat. After one hour of cooking, add the salt.

4. When the beans are ready, drain them and rinse them with cold water. Reserve. 5. Boil the quinoa for about 15 minutes, drain it and rinse it with cold water. Reserve.

6. In a large bowl, mix the quinoa and cold beans. 7. Drain the spring onion. Cut the cherry tomatoes and cucumber and add to the bowl. Mix well and season with salt, oil and ground pepper.

8. Cut the avocado into squares and add it to the bowl. Sprinkle the avocado with the juice of half a lemon so that it does not oxidize. Mix everything well and adjust the seasoning if necessary. Enjoy!
