About 25 minutes and reserve. 2. Sauté the julienned onion and minced garlic. 3. When they are transparent, add the diced zucchini and fry for 3-4 more minutes. 4. Add the spices, curry, paprika, cumin, ginger, and lentils without prior hydration. 5. Stir for a minute and add the vegetable broth. Adjust pepper and salt to taste. 6. Cook for about 7-8 minutes, if it becomes too dry add more broth. 7. Finally, add the entire can of coconut milk and cook for another 5-6 minutes, or until the lentils are soft. 8.
