Ingredients for various croquettes: - 2 large carrots - 1 small onion - 3 dates from @casa_perris - 2 tablespoons of wheat flour from @casa_perris - EVOO and salt - Soy drink 400ml For the batter: - Wheat flour - Chickpea flour - Water - Bread crumbs Elaboration: 1. Grate the carrot and cut the onion very finely. We sauté them over low heat and add the finely chopped dates. Once cooked we let it rest. 2. In another pan we sauté the two tablespoons of flour with EVOO and as soon as it becomes pasty we begin to add soy drink little by little until the flour dissolves. 400 ml of milk more or less? We stir until it thickens. 3. Once the béchamel is made, we add it little by little to the vegetable mixture and turn on the heat until it has mixed well and the mixture separates from the pan when stirred.
